ingredients
- 1 lb ground turkey
- 1 teaspoon salt
- 2 teaspoons sage
- 1 teaspoon fennel seed
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 1⁄2 teaspoon white pepper
- 1⁄2 teaspoon cayenne
- 1⁄4 teaspoon garlic powder
- 1⁄8 teaspoon ground cloves
- 1⁄8 teaspoon nutmeg
- 1⁄8 teaspoon allspice
directions
- Combine all ingredients (use less pepper if you don't want a spicy taste) and blend well.
- If time permits, refrigerate overnight to let the meat absorb the flavor of the spices.
- Form into patties and cook as needed, freezing leftovers.
- Don't overcook or they will dry out--remove from the heat as soon as they're no longer pink inside, but still juicy. (if you prefer a moister texture, you add a splash of olive oil or an egg to the mixture just prior to cooking).

My kids and I love this recipe, but it can be expensive to make every day. Recently I got an idea from the Taco Bell incident. If they can add oats (which are really good for you anyway) to their taco meat, why can't I add it to my sausage? I ground some oats up in my food processor and added it to the sausage with a little water. It tasted great and I got an extra half pound!

Wow, very tasty. Took some ideas from others, made 3lbs ground turkey, 1lb ground pork. Didn't have fennel seeds, but since it's the locorice flavor we want, I substituted with anise extract, I also had star anise which would have also worked. Didn't have thyme either so omitted and it still turned out awesome.I like sausage on the sweet side so added 1 tspoon of brown sugar and 3 teaspoons of maple syrup, which I like on sausage and strangely not on pancakes.

This is very good! my youngest son is allergic to nitrates so store-bought bacon and sausage are a no-no in our house and purchasing nitrate-free foods can be expensive! <br/>This was easy to make, I purchased 4 lbs. ground turkey from Costco, prepped the seasonings (leaving out cayenne & white pepper). The meat was cold! So I used my Kitchen aid mixer to stir it all up. I immediatley cooked up enough for breakfast right then...it was very good. Let the rest sit a couple of hours, formed into patties and baked in the oven and into the freezer they go. This is a trifecta winner at our house: good taste, less cost, and healthy!
