Tuna Noodle Casserole

"Comfort food. Different alternative to the "Cream of Mushroom" soup recipe. Haven't tried this yet but it sounds good. "

  • Cook noodles and drain.
  • Melt one Tbls butter and cook the mushrooms until soft.
  • Mix together the mushrooms, tuna, pimentos, sour cream and milk.
  • Check the seasonings.
  • Melt one oz.
  • butter, remove from the heat and toss in the bread crumbs and Parmesan.
  • Mix together the noodles and tuna mixture and put into a lightly oiled casserole dish.
  • Sprinkle breadcrumb mixture on top.
  • Bake at 350 degrees for 35-45 minutes or until lightly brown and bubbly.

  1. This is very good, I would make this even if tuna weren't the only thing I had to make!!!!! And, NO peas- I like peas, but only as a side dish! I think what makes this a special tuna casserole is the sour cream- adds a great flavor- not too rich also. And with breadcrumbs, this is done right- thank you!

  3. This was good. I did not want another casserole that included cream-of-anything soup. Yuck. I was pleased with this but from experience I know that just sour cream tends to be too tangy for my family so I always cut the amount in half and add a dollop of mayo. Yummers! It also lends itself very well to veggie swapping and we'll try broccoli and carrots next time. Thank you very much for a simple, delicious, adaptable recipe!
     
  4. This is probably the best casserole I've made in a long time! The flavor was awesome and preparation was a snap. The only thing I changed was the addition of two tablespoons of garlic powder because being married to an Italian, everything has to have garlic in it! My husband said that it was better than his mother's and that's a darn good compliment because she's an outstanding authentic Italian cook. He's told me many times that there's very little I could make that would outdo anything she makes. He wants me to give her this recipe to replace the one she uses!! Thanks JoAnn!
     
  5. Good recipe! I was looking for a tuna noodle cassarole without cream of soup -- and here it was!! We dont like mushrooms and I didnt have pimentos, so I added onion, garlic and celery. My son loved it!!

Love to read. I collect books and have quite a collection but am always adding more. I have also discovered audio books and find that I am able to get through more books by listening to them. Have recently started knitting and I really enjoy it even if it is quite a challenge at times. Always searching for a great recipe in any food category. As might be expected I never find "The One" but find many delicious ones along the way. One of our favorite restaurants is Jensen's Supper Club located in Eagan, MN.
