These were pretty good--I subbed a few jarred jalapeno rings (patted dry & chopped) for the celery. I also used a mix of regular & chili-flake crackers to put into the balls, and rolled the final product in chopped almonds for color contrast. Nice, crunchy, and lightly spicy--a good snack for my in-laws' 40th anniversary party!

Most excellent little appetizer for a party or just having as a snack. very simple to make and taste wonderful. You could even just make 1 big ball (like a cheese ball) rolled in the crumbs and serve with crackers. YUM! I have made this twice and the second time I added a few seasonings.Accent(to enhance flavor more) and Old Bay Seasoning. I also used 1/4c. Processo Garlic & Herb Bread crumbs in place of the 2/3c crushed ritz crackers and used the Ritz cracker crumbs to roll them into the balls. I will be making this many of times cause its so Yummy and so easy to make. Thanks for sharing this wonderful recipe.
