  • Bring coconut milk, lemongrass, and galanga to a boil.
  • Simmer for 10 minutes.
  • Add chicken.
  • Simmer until chicken is partially cooked.
  • Add mushrooms. Flavor with lime juice, lemon juice, fish sauce, chili paste, and garlic.
  • Simmer until chicken is fully cooked.
  • Serve with rice.
