- fresh grated parmesan cheese
- 1 (15 ounce) can diced tomatoes with basil oregano and garlic
- 1 (8 ounce) bag Baby Spinach, rinsed and drained
- 1 small onion, chopped
- 4 tilapia fillets
directions
- preheat oven to 350.
- spray or oil 13x9 baking dish.
- place spinach in dish.
- then tilapia.
- sprinkle with cheese.
- then tomatos and onion.
- cover with foil and bake 15 min, remove foil and cook until fish flakes. enjoy.

Fantastic and easy recipe! I took Coco can Cook's advice and sauteed my spinach, garlic, onion then added mushrooms, red wine and broccolini. I layered that under the tilapia and added tomatoes and serrano peppers. Cooked at 500, flipped the fish and then broiled it. Served with a great whole wheat fresh loaf bread. Fantastic!

I would have given 5 stars, but I thought the cooking directions needed tweaking. I looked at the directions, I knew that I needed to precook the spinach a bit before baking so that it would be wilted enough. I lightly sauteed the spinach with the onion and garlic. I then transferred the spinach to the pan, added the tomatoes and then the fish. I seasoned with salt, red pepper, oregano and a little bit of lemon juice. I broiled uncovered for 11 min at 500 degrees. It came out perfect! I served over whole wheat vermicelli. I love finding a healthy recipe that is tasty too!!

We really enjoyed this, though I made a bunch of changes. I used frozen spinach that I drained well. And instead of tomatoes with basil I used rotel. I did use the cheese but I found that they taste was lost with the rotel and don't think, for the calories, that it was worth it to me. That said, this was a tasty way to cook fish. Thanks!
