The Original Lemon Curd Oatmeal

ingredients
- 1⁄3 cup quick oats
- 1⁄2 1/2 cup skim milk or 1/2 cup light vanilla soymilk
- 1 -2 tablespoon lemon curd (depending how lemony you want it!)
- 1 gingersnap cookie (optional)
directions
- Combine all ingredients in a bowl, except gingersnap.
- Microwave for one minute and then stir.
- Microwave for an additional 30 seconds.
- Break gingersnap over the top, in tiny pieces.
- Serve with extra milk or cream if desired.

I love lemon curd and gingersnap together, and I'm pretty partial to oatmeal as well, so this was a sure thing for me. I had to add a bit more oats to mine to absorb the liquid, but I think it's because I used old fashioned oats rather than the quick oats. I used vanilla rice milk, the full 2 tbs of curd, and I topped it with crumbled gingersnap and a few fresh raspberries. I'll definitely be adding this to my winter breakfast repertoire, thanks for posting! Made for PAC Spring 2014

Delightful lemon curd-gingersnap taste sensation! Why buy packaged flavored oatmeal when you can have this in the same time? I used 1 1/2 tbsp. of lemon curd. I have even more to celebrate, because a steady diet of real oatmeal brought my cholesterol down to its proper level. Made for The Wild Bunch for ZWT8 Family Picks.

I used nearly 2T of lemon curd (that's what I had leftover from something else) and water in place of milk and it ended up lightly lemon flavored. I think I might add a little lemon zest if I wanted a more pronounced lemon flavor. I topped it with fresh strawberries. Super easy, too! Made for ZWT4.

This is an innovative idea, as well as yummy! I added the higher amount of lemon curd, as we are lemon lovers. We tried different bowls with different toppings -- the gingersnaps, as well as raspberries, blueberries, sliced almonds, and walnuts. We liked it topped with the nuts the best, though the raspberries and nuts together also made a nice combination. If you are a big eater, you might want to make 50 percent more than the recipe calls for. The amount of liquid and cooking time produced the perfect consistency for this oatmeal. Thanks for the great idea and recipe!
