ok so my pantry was kinda desolate and this made great pancakes: 2 bananas -> 3 frozen bananas 1/4 cup milk - > no milk ( i was out) 2/3 cup sugar -> 2 scoops of protein powder (vanilla) 3 tablespoons oil -> 1/4 cup olive oil and 1/5 cup canola oil (approx cause i ran out of olive oil) 1/2 teaspoon vanilla -> 1/2 teaspoon vanilla (gotta stay true to the recipe) 3 eggs -> 1 egg 2 2/3 cup bissquick -> 1/3 cup bisquick no nuts 3/4 cup cake flour Not good for making cookies (which i decided to try with some of the batter) but a delicious and moist pancake!!!

I currently live in West Virginia. I have two daughters, 10 and 7 yrs. I teach 4th grade at the small elementary school that they attend.

Shortly before the birth of my youngest daughter, I started becoming interested in cooking, with great thanks to this site. I love trying new things. I used to collect cookbooks, and I still have quite a few, but since I've been a member of food.com, I have to admit that I don't use them much anymore. This is so much easier!

In addition to cooking, I enjoy spending time with my girls, reading, and shopping. I'm also a big Virginia Tech fan, hence my user name. It's where I went to school, so my loyalty lives on!
