Taco Quiche

  • Line a greased 13x9x2 baking dish with the tortillas, tearing to fit if necessary.
  • Cook the meat and onion in a skillet.
  • Drain off excess fat.
  • Add garlic, chilies, and seasonings.
  • Spoon the mixture onto the tortillas.
  • Sprinkle with the cheese.
  • Beat eggs well and then blend in the sour cream.
  • Pour this mixture on top of the meat and cheese.
  • Bake in a preheated oven set at 350 degrees F for 45 minutes.
  • Let sit for 5 minutes before topping with the lettuce, tomatoes and olives.

  1. I was very pleasantly surprised with this quiche. Substituting sour cream for milk gives a quiche a different texture. This quiche is COMFORT food! We loved it. We served it with some avocado slices and it was like having brunch at the Hilton Los Cabos. I know because... I stayed there!
     
  2. This is an awesome dish! I used ground beef and sun-dried tomato/basil tortillas and it came out wonderful. I halved it as there was just three of us and we just about wiped it out. This is easy, fun and different and it's definitely a keeper. Thanks so much Geema, this is already a family favorite!
     
  3. Wow! This was really good, and incredibly easy to put together. I made one substitution - used diced avocado in place of the olives since none of us are major fans. I also let each of us add their own toppings since my kid won't eat tomato. Definitely will make this again. Thanks!
     
  4. I halved the recipe and was very skeptical about it. But I have to say I was proven very wrong. This is a GREAT dish!! The flavors all combine nicely, there's no overpowering from any of the ingredients, and we ate it all up! Thanks for a great recipe!
     
  5. This was really easy and pretty tasty. It just did not have quite enough spice for our tastes (even though I was heavy handed with the spices and used the green chilies) and was slightly on the bland side. Topping the slice with fresh cilantro, and salsa helped greatly and I was unfortunately out of olives which would have been a great addition as well! I also would have liked more of the egg mixture and less of the beef (we used ground turkey) mixture. Having said that, this is such a great, easy casserole dish that uses items I always have on hand. The ingredients compliment each other well. Next time I will add at least 2 more eggs and cut the meat down to about 3/4 of a pound or so, I will definitely double the spices as well. I know that with those few slight changes this will be a regular in our house. Thanks!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
