Shrimp Crostini

  • Preheat oven to 350 degrees.
  • Slice baguette on the diagonal into 1/4 inch slices. Lightly brush one side of slices with olive oil and rub with cut clove of garlic. Place on baking sheet and toast in oven for 10-15 minutes or until golden brown.
  • Heat olive oil in skillet on medium heat. Add garlic, onion, and red pepper and saute for 3 to 4 minutes until translucent. Add shrimp and saute until shrimp curls and just turns pink. Remove from heat immediately.
  • Place cooked shrimp, onion, and red pepper in food processor. Add parsley, mayonnaise, Parmesan, and lemon juice and pulse until shrimp is chopped, but do not puree. Season with salt and pepper to taste.
  • Spoon mixure onto toasted baguette slices. Garnish with minced parsley.

  1. WOW and then again WOW! Made for PAC2009. This is fantastic. I love the tastes blended together. I love the garlic rub as it gets into each crevice on the bread. I did not use a french baguette per se, used a baguette I made. The colors make you want to eat it, then you take a bite into it, savor it, and want the whole thing for yourself. DH loved this. We are both shrimp eaters and this is a nice break from the traditional dinner or hor'duerve itself. We sat watching TV at the lake and munching on your crostini. WIll make these regularly as I can eat this and a veggie and be a happy camper. Thank you. 10 stars if I couldl
  2. OH MY GOSH, these are so good. I made them tonight for a get together and they are amazing. I had half a baguette and wasn't sure what to do with it. The only thing I changed was the color of the pepper. I had a yellow one. Thank you for posting this recipe.
  3. These turned out well. I think next time I will sprinkle a little more cheese of top and put them in the broiler for a little while. I also used a yellow pepper. Nice recipe. Thanks for posting.
