Sweet Zucchini Bread

"Treasured family recipe. Been eating this as long as I can remember. Really easy recipe, longest part is shredding the zucchini!"

• Yields: 2 loaves

ingredients

• 3 eggs
• 1 cup oil
• 1 1⁄2 cups sugar
• 2 cups zucchini, shredded
• 1 teaspoon vanilla
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1 teaspoon salt
• 3 teaspoons cinnamon
• 2 1⁄2 cups flour
• 1⁄2 cup chocolate chips
• 1⁄2 cup nuts, chopped
• 1⁄2 cup shredded coconut

directions

1. Combine eggs, oil, sugar and zucchini.
2. Mix in dry ingredients.
3. Stir in chocolate chips, nuts and coconut.
4. Bake at 350 degrees for about 1 hour.

Very good! Liked the coconut in this and the amount of cinnamon was perfect. Made for Spring 2014 PAC.
