Sundown Oven Pancake

"An oven "pancake" that puffs up in the pan to form a shell for crispy vegetables and Cheddar cheese. Nice for a brunch."

  • Heat oven to 425 degrees.
  • In 9" pie pan, melt 1 tablespoon of butter in oven.
  • Meanwhile, in small bowl stir together flour, milk, eggs and 1/4 teaspoon of salt.
  • Pour into pie pan with melted butter.
  • Bake for 12 to 15 minutes, or until golden brown.
  • Meanwhile, in 10" skillet melt 2 tablespoons of butter.
  • Add remaining ingredients, except cheese.
  • Cook over medium heat, stirring occasionally, until vegetables are crisply tender (12 to 15 minutes).
  • Sprinkle 1/2 cup of cheese in bottom of pancake; top with vegetable mixture.
  • Sprinkle with remaining 1 cup of cheese.
  • Return to oven; continue baking for 5 to 7 minutes or until cheese is melted.

  1. I have never made an oven pancake before. How cool!! The pancake puffed up, then sank to make a golden brown shell. I got to use broccoli and tomatoes from my garden. It was delicious. I used a little more salt and pepper than called for. I cut it into wedges and served. A lovely meatless meal that was sooo good. Thanks keen5 for recommending it.
     
  2. I have made this a couple of times and it is a really cool recipe. The way the pancake puffs around the veggies is fun. I have varied the veggies that I include simply based on preference. The pancake itself is so simple to assemble and the outcome is really impressive.

I love to cook, but don't have a lot of time to do it, since I work full time. I like to try a new recipe every Saturday, if time allows. <br> <br>I have one grown son and three grandaughters ages 16,10 and 3. The ten year old has won many medals in gymnastics meets over the past few years.
