Sugar-Free French Vanilla Ice Cream (With Xylitol)

ingredients
- 2 large eggs
- 3⁄4 cup xylitol sugar substitute
- 2 cups heavy whipping cream
- 1 cup milk
- 2 teaspoons vanilla extract
directions
- Whisk eggs in a mixing bowl 1-2 minutes, until light and fluffy.
- Whisk in Xylitol slowly and continue whisking about 1 minute, until blended. Pour in milk, cream and vanilla. Whisk to blend.
- Pour the mixture into an ice cream maker and freeze according to your maker's instructions.
- Makes 1 Quart. You can also add 1 cup chopped up fruit, about 2 minutes before it is done (after ice cream stiffens).

Delicious ! Just finished making 1/2 gallon per the given recipe for vanilla ice cream - also added chopped strawberries and whole blueberries - also used grass-fed milk and heavy whipping cream - (grass fed dairy adds even more health benefits - good article: https://www.rodalesorganiclife.com/food/grass-fed-dairy-guide ) - tastes as good as any store purchased ice cream. Wow! What a great recipe. I have really had to cut down on my sugar, but I hated to give up my ice cream. I bought a nice cream maker and was excited to find this recipe. I purchased the Xylitol and made a batch last night and added some chopped up peaches I canned last fall....YUMMY! Thanks for posting it.
