Oregon Blackberry Upside-Down Cake

ingredients
- 2 cups fresh blackberries
- 1⁄2 cup sugar
- 2 tablespoons cornstarch
- 4 tablespoons shortening
- 1⁄2 teaspoon vanilla
- 1⁄2 cup sugar
- 1 egg (beaten)
- 3⁄4 cup all-purpose flour
- 1⁄4 teaspoon salt
- 1 1⁄2 teaspoons baking powder
- 1⁄4 cup milk
directions
- Pre-heat oven to 350°F.
- In a bowl toss together the first three ingredients; Blackberries, sugar and cornstarch, mashing only a few of the berries. Pour this into an 8-inch square cake pan.
- Cream together shortening, sugar, and vanilla. Add egg and beat well.
- Sift flour, baking powder, and salt and add to mixture, add milk and stir well to mix.
- Spoon batter over berry mixture carefully trying to spread evenly.
- Bake for 40 minutes at 350°F.
- Allow to cool somewhat before serving.

Absolutely wonderful, even if I did have to make it using frozen blackberries! I have huge bags of various frozen berries & now that I'm able to get frozen blackberries from Costco, well . . . This cake was a pleasure to assemble & delight to eat! Definitely a keeper recipe that I'll be making again & again! And I look forward to when I can get these berries fresh & at their peak!
