- 1 cup butter, softened
- 1 1⁄4 cups confectioners' sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1⁄8 teaspoon salt
directions
- In a mixing bowl, cream butter and sugar. Beat in egg and vanilla.
- Combine the flour, baking soda, cream of tartar and salt; gradually add to the creamed mixture.
- Shape into two 5-in. rolls; wrap in plastic wrap.
- Refrigerate for 1 hour or until firm. Unwrap; cut into 1/4-in. slices.
- Place 2 inches apart on ungreased baking sheets. Bake at 350 degrees F for 8-10 minutes.
- Remove to wire racks to cool.
