DIRECTIONS

  • Heat oven 160 C.
  • Grease and line 20 cm round tin.
  • Put dates in bowl and cover with boiling water.
  • Melt butter in pot, stir in sugar, allow to cool.
  • Add eggs and ginger to pot.
  • Drain dates and add to pot.
  • Stir in flour, then spoon mixture into cake tin.
  • Bake 50 - 60 minutess - a skewer stuck into cake should come out with a few moist crumbs sticking to it.
  • Leave to cool in tin.
