Spun Honey Spread (Honey Butter)

"This spread is great on toast or bagels for breakfast or a snack. I got this recipe from my mother-in-law."

• Yields: 2 jars

ingredients

• 1 cup sugar
• 1 cup honey
• 1⁄2 cup heavy whipping cream (don't beat)
• 1 lb butter (425 grams)
• 1 teaspoon vanilla

directions

1. Mix sugar, honey and cream together and heat until boiling.
2. Stir continually and boil for 1 minute.
3. Remove from heat and add butter.
4. Beat well with mixer.
5. Add vanilla and beat until smooth.
6. Store in refrigerator.

Made this to go with pumpernickel bread sticks. I didn't beat it with a mixer and was a little grainy. I only had half and half so that may have added to the problem. Will follow the recipe next time. Had good flavor and will use on toast too.

Our favorite restaurant serves dinner rolls w/ honey butter spread & I love to save them for my "dessert". I was excited to try this recipe, after I found it. It's a much better version than store bought. Not only does it taste better, but it doesn't have hydrogenated oil or HFCS in it. 3 out of 4 in my family really like it, but the 4th (DS) doesn't count... he's way too picky about his food.
