ingredients
- 2 cups unbleached flour
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1⁄2 toasted hazelnuts, chopped
- 1 large egg
- 1⁄4 cup butter, melted
- 1 cup low-fat milk
directions
- Preheat oven to 425F and prep. muffin pan with 12 paper liners.
- In a large bowl combine the first 4 ingredients.
- In a medium bowl, beat the egg lightly then stir in the melted butter and milk. Add to the dry mix all at once and stir until just blended.
- Fill muffin cups 2/3 full and bake 20-25 minutes (or until brown).

Why "SoupCookie"?
My cousin Ryan use to come to my house after school sometimes and was *always* hungry! So he used to make his version of chocolate chip cookies and I can't remember what he did or didn't do right but the cookies never failed to come out flat and doughy and gooey. We'd put them in a bowl with milk and eat it with a spoon.....sooooo good!
To this very day his recipe has not been deciphered ;)
