  • place spinach in salted boiling water and add some pepper. cover and cook 3 minutes.
  • cool spinach under cold running water, drain and squeeze leaves dry, and chop.
  • butter baking dish and add chopped spinach. dab with a bit of butter. season with salt and pepper and paprika.
  • pour light white sauce over spinach, and sprinkle with cheese. broil 10 minutes in oven.
  • serve hot.
