Spinach Pancakes

  • In a large bowl, beat eggs and add spinach and stir to combine.
  • Add cottage cheese, bread crumbs, parmesan cheese, flour and salt and stir well to combine.
  • Refrigerate for 20 minutes.
  • In a large skillet over medium high heat, add oil and butter.
  • Place heaping spoonfuls of batter in pan and pat down into a pancake shape.
  • Cook until brown on each side, If needed, add more oil.

Used it as a side dish with broiled marinated salmon and fresh corn which I cut off the cob and sauteed. — Aug 8, 2005 Sorry, I totally forgot to mark 5 stars, and this recipe really deserved them.
     
  5. I used this as a side dish for fish, but I think it makes a great snack too. You could make them in "minis" and stick a toothpick in for an appetizer as well. I used ricotta cheese instead of the cottage cheese and thought this was very tasty. We'll have these again for sure. Thanks for posting this keeper Marie!
