- 1 lb fresh spinach
- 1⁄4 lb fresh mushrooms, sliced
- 3 hard-boiled eggs, chopped
- 1 bunch green onion, chopped
- 1⁄2 cup olive oil
- 5 tablespoons wine vinegar
- 1⁄3 cup sugar
- 1⁄4 teaspoon dry mustard
- 1⁄8 teaspoon pepper
- 8 slices bacon, cooked and crumbled
- 1⁄2 cup blue cheese, crumbled
directions
- remove stems from spinach, wash leaves thoroughly and pat dry.
- Combine spinach, mushrooms, eggs, and green onions in large bowl.
- combine oil, vinegar, sugar, and seasonings in a jar or salad dressing mixer. Shake vigorously.
- Top salad with dressing just before serving and toss gently.
- Garnish with bacon and bleu cheese.

My daughter loves spinach salads, and wanted to take one in her lunch. I chose this recipe because she also loves mushrooms. Each day, I'd throw together some spinach, sliced mushrooms, one hard boiled egg, chopped up, and some feta cheese (subbed for the blue cheese). The salad container has a comparment so she can add the dressing at lunchtime. It lasted all week this way, and the salad bowl comes home empty. Several days, I also added a couple sliced strawberries. Thanks for a great recipe!
