Spinach Cheese Stuffed Chicken

"I found the filling recipe for stuffed mushrooms but its soo much better in the chicken."

ingredients

• 2 lbs boneless skinless chicken breasts
• 1 package mushroom and onion seasoned stuffing mix
• 1 1⁄2 cups hot water
• 2 tablespoons butter
• 3 garlic cloves, minced
• 1 package frozen thawed, chopped spinach
• 1 cup mozzarella cheese
• 1 cup parmesan cheese
• 1 egg
• 1 cup Italian seasoned breadcrumbs

directions

1. preheat oven to 400ºF.
2. mix stuffing mix and water in large bowl; set aside. Melt butter in skillet on medium heat. Add chopped garlic; cook for 1-2 minute Add to prepared stuffing with spinach and cheeses; mix well.
3. flatten chicken breasts to 1/4 in thick. Spoon stuffing mixture on chicken and roll up or fold over.
4. beat egg and dip the chicken in the egg then in the breadcrumbs.
5. Bake 45-55 min or untill chicken is cooked through.
