  • 1 lb penne pasta
  • 12 lb cooked boneless skinless chicken breast, diced
  • 1 (16 ounce) jar white cheese dip (medium or spicy queso dip)
  • 1 (15 ounce) can black beans, drained
  • 1 (8 ounce) can tomato sauce (basil garlic oregano flavor is the best to use)
  • 1 tomatoes, seeded & diced

directions

  • Boil the noodles until they are tender, drain & put into a large serving bowl along with the cooked chicken.
  • Heat the queso dip, tomato sauce, & black beans in a sauce pan. Pour over the noodles once hot.
  • Top with the diced tomatoes & serve hot.

  1. I've never had the Ruby Tuesday's version, so I'm not sure if it tasted like their version. This is a good basic recipe, but it wasn't quite what we were looking for...I think it may have been the cheese dip. I'd like to give 3 1/2 stars, but Zaar doesn't permit. Made for Zaar Stars tag.
     
  2. This is the closest version to RT if you don't have time for the other. The other one does have far more ingredients and spices...and fresh ingredients so it tastes almost exact, but if you dont have the time do it this way, but it really is better with the other version. Been making it the longer way since 2000. And the velveeta is only gooey if you dont follow the directions.
     
  3. Great and simple recipe. I was looking for something like the Ruby Tuesday's pasta and many of the others were really complicated. They also included velveeta, which many people would complain about in the comments. I haven't had the Ruby Tuesday's version in awhile, but I'd say this was pretty darn close. Like some of the others that reviewed, I also made a few modifications. I used a can of Ro-Tel instead of a chopped tomato and used less spaghetti sauce (mostly because it wouldn't fit in my sauce pan). I also added a little garlic and cumin, and warmed the pasta and chicken with the sauce before serving.
     
  4. What a great and easy pasta dish! The only thing I did differently was to add the noodles back to the pot to warm them in the sauce, instead of pouring the sauce over the noodles in a serving bowl. Loved the tomato sauce and queso combination. The whole family really enjoyed this - thanks for sharing the recipe!
     
  5. With some changes, this was outstandingly delicious and outstandingly easy! I rinsed the beans, and sauteed three chopped cloves of garlic with three chopped tomatoes. I also added garlic powder, red pepper flakes, black pepper, and some pasta seasoning blend. Finally, I added about 1/2 cup pasta cooking water to cut down on the saltiness of the dish. You could do whatever you want with this recipe--add corn, more chicken, a can of diced tomatoes, and/or a jar of salsa--and it would still be great.
