  • Preheat oven to 350°F. Brown meat in large skillet on medium-high heat. Drain fat. Stir in Seasoning Mix, tomatoes, beans, corn and green chiles. Bring to boil. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally.
  • Cover bottom of greased 11x7-inch baking dish with 3 tortillas, overlapping as needed. Layer with 1/2 of the chili mixture and 1 cup of the cheese. Repeat tortilla, chili and cheese layers.
  • Bake 30 minutes or until heated through.

  1. This meal was SO delicious that even my SUPER PICKY 6yr old, who I can hardly EVER please, LOVED IT! She even went for 2nds. I will def be making this again soon! I Used Mexican blend cheese, along with some shredded cheddar, a half an onion, & maybe even a green pepper if you like that sort of thing, and it's a GREAT dinner! I will DEFINITELY be making this again, thank you for the idea!!!!

Tweaks

  1. I decided to use 2 cups of Mexican blend shredded cheese, and I also shredded some cheddar I had in my fridge to make it extra cheesy.. I also added half of an onion, and some extra spices that I like.
