  • Mix salsa, refried beans and enchilada mix in a slow cooker til combined.
  • Add the chicken breast and cover and cook on high for 6 hours. Shred chicken and serve with all the fixings. Enjoy!

  1. I like a recipe you can throw in the crockpot, walk away and have dinner ready when you return! To me, any chicken in the crockpot loses SOMETHING. It's always rather dry and the texture changes. With that said, this recipe works great for a quick meal and is tasty! I had chicken taco mix on hand and used it rather than enchillada seasoning and I am sure you could use plain taco mix too!
