Slow-Cooked Soy-Braised Pork

  • Cut the pork loin into six equal pieces and place into a 3 1/2 qt crock pot. Cut ginger in three slices and add to meat. Add the remaining ingredients. Cook on low 6 hours or high 3 hours.
  • Remove the pork to a plate. Remove and discard the cinnamon stick, the ginger and the garlic cloves. Transfer the liquid to a pot over high heat and simmer until reduced and slightly thickened and glossy.
  • Slice pork 1/4"-1/3" thick and serve with thickened sauce.

I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
