Skordalia (Garlic Sauce)

- Ready In:
1 1/4 cups
- Peel potato and boil until tender. Put through a ricer or sieve. Measure 1/2 cup of potato & put in a bowl; mix in garlic and salt. Gradually add olive oil and vinegar alternately while beating with a spoon. Chill. Serve with meat or fish.

Very interesting sauce - so velvety, almost buttery. I added as much vinegar as I thought tasted right, probably a few tbsp less than what's called for, and it's still very tangy. I also lightened up on the oil a bit, the consistency was good so I figured why add more. Planning to serve alongside a grilled meal. Thanks for posting, it's really unusual and enjoyable! ZWT6
