ingredients
- 1 -2 lb stewing beef, diced
- 2 (14 1/2 ounce) cans beef broth
- 2 beef bouillon cubes
- 2 (16 ounce) cans chopped tomatoes
- 1 cup potato, diced
- 1 cup celery, chopped
- 1 1⁄2 cups onions, chopped
- 1 cup carrot, chopped
- 1 cup frozen corn
- 1 cup cooked barley
- 1 cup green beans
- 1 cup zucchini, chopped
- 1 tablespoon salt
- 2 teaspoons garlic powder
- 1⁄2 teaspoon basil
- 1⁄4 teaspoon pepper
- 2 tablespoons butter
directions
- In large stock pot cook beef and 1/2 cup onions in butter til beef is browned.
- Add all other ingredients and bring to boil.
- Cover and simmer 30-45 minutes til all vegetables are tinder.
- I've been known to add more beef broth, tomatoes and spices if I think its needed for taste or to thin broth.
