  • Mix the salt and shallot and allow to sit covered with plastic wrap for 3-5 days until completely dry.
  • Stir once daily.
  • Grind up with a coffee grinder or mortar and pestle until you have a fine grained and well-mixed seasoning.
  • Dehydrated foods and salts LOVE to reabsorb moisture so remember to store in an airtight jar to prevent your home's ambient humidity from ruining all your hard work.
