- 1 medium shallot, minced
- 2⁄3 cup kosher salt
directions
- Mix the salt and shallot and allow to sit covered with plastic wrap for 3-5 days until completely dry.
- Stir once daily.
- Grind up with a coffee grinder or mortar and pestle until you have a fine grained and well-mixed seasoning.
- Dehydrated foods and salts LOVE to reabsorb moisture so remember to store in an airtight jar to prevent your home's ambient humidity from ruining all your hard work.
