ingredients
- 1 cup uncooked rice, washed and drained
- 1 cup whole kernel corn, drained
- 8 ounces tomato sauce
- 1⁄2 cup water (mixed with tomato sauce)
- 1⁄2 cup chopped onion
- 1⁄2 cup green bell pepper
- 1 lb extra lean ground beef, uncooked and broken
- 14 1⁄2 ounces diced tomatoes, undrained
- 4 slices bacon, halved
- shredded cheese (optional)
directions
- Place ingredients in casserole dish in the order given. Cover and bake at 350 degrees for 1 hour. Uncover and cook for 30 minutes longer-until bacon is crisp. If adding cheese, do so with 15 minutes left to cook.

This is one of the first things I learned to cook as a young girl many years ago. I discovered it was best to mix the rice, tomato sauce/water together then continue with the layers. Otherwise the rice can pack down and not cook sometimes. It's a great budget beater that I haven't made for 30 years. Thanks for reminding me of it.

You really should try it LoneStarChef. It's an old recipe. One that my mother used to make. The newer versions have the addition of the diced tomatoes which I like but makes it an eight layer casserole and the optional addition of cheese. I do use turkey bacon instead of regular bacon which works because my husband likes it made this way. Mix salt and pepper or seasoned salt and pepper in the ground beef. Cheese on top and some added in the middle is good but not necessary if you're counting calories! I like JustJansS suggestion of mixing the rice, tomato sauce and water together. Enjoy!

I am pretty much at the bottom of the pole when it comes to cooking. If I know how to make something then I like to try changing it up, but for the most part what I know how to make is pretty basic. 21 and learning to cook!
