Scallops With Capers and Tomatoes

- 12 large sea scallops (l 1/2 lbs.)
- cooking spray
- 1 garlic clove, minced
- 1⁄2 cup dry white wine
- 3 tablespoons capers, drained
- 2 tablespoons chopped fresh basil
- 1⁄4 teaspoon salt
- 1 tomatoes, seeded and diced (about 1 cup)
- 1 tablespoon extra-virgin olive oil
directions
- Pat scallops dry with paper towels. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add scallops to pan; cook 3 minutes on each side or until done. Remove scallops from pan; keep warm.
- Add garlic to pan; cook 15 seconds, stirring constantly. Add wine and next 4 ingredients (through tomato) to pan. Serve the tomato mixture over scallops; drizzle evenly with oil just before serving.

*Made for Australia/NZ Swap #81* What a hidden treasure ! Capers and tomatoes are a great addition to lovely scallops, served with steamed saffron rice and garden grown broccoli ! Needed just a little more salt, but was surely quick and tasty. This will be a frequent repeater. Thanks for posting, mama smurf.

My husband and I are retired and travel quite a lot. We have a place in Boise, Idaho and now a part-time home in Carlsbad, California. It's nice to be in California where they have so much more fresh food...vegetables and fish! They have so many farmer markets that I really have to watch myself, but cooking is so much fun and they have such a variety of things to use.</p>
<p>I have two daughters and one has three kids...my angels (the twins who are now 4) and my man who is 2 and just as big as the twins. I do miss them when we are gone...they grow so fast.<br /><br />I love to collect and read cookbooks -- way to much from my husbands point of view. I love to watch Rachael Ray, Paula Deen, Barefoot Contessa and Everyday Italian.
