- 1 1⁄2 cups red lentils
- 1 lb hot Italian turkey sausage
- 14 ounces sweet corn, drained
- 1 medium onion, chopped
- 4 celery ribs, chopped
- 5 cups water
- 1⁄4 teaspoon black pepper, freshly ground
- 1⁄4 cup pearl barley
directions
- Brown sausage over medium heat with onions and celery breaking them into small pieces.
- Pour in the water, add pepper, corn and lentils. Stir all the ingredients, bring to a boil over medium heat, stirring occasionally.
- Reduce heat, cover and simmer for 1 hour, stirring from time to time to prevent the lentils from sticking or burning. Add barley after about a half hour, then remove lid and simmer the other half hour.
