Sausage and Spinach Bread Stuffing

  • In skillet, cook sausage till brown. Remove. reserving 2-3 tablespoons drippings in skillet.
  • Cook mushrooms, onion, carrot and garlic in drippings till tender. Drain off fat.
  • Combine bread cubes, sausage, cooked vegetables, cooked spinach, milk, basil, oregano, poultry seasoning and red pepper.
  • Mix well. (If too dry, add a few drops of milk.) Form into balls using 1/2 cup mixture for each.
  • Place on greased baking sheet. Bake in a 325*F oven 25 minutes.
  • Serve arranged on spinach lined serving platter with turkey. Garnish with carrot curls.

I am now semi-retired and an Empty Nester. I try to focus on lighter dishes for day to day menus. I still like to explore new food ideas. I look for smaller quantity dishes now.
