Sausage and Spinach Bread Stuffing

- 1 lb bulk pork sausage
- 8 ounces sliced fresh mushrooms (3 cups)
- 1 1⁄2 cups chopped onions
- 1⁄2 cup shredded carrot
- 3 garlic cloves, minced
- 8 cups dry bread cubes
- 10 ounces pkg frozen chopped spinach, cooked and drained
- 1⁄2 cup milk
- 1 1⁄2 teaspoons dried basil, crushed
- 1⁄2 teaspoon dried oregano, crushed
- 1⁄2 teaspoon poultry seasoning
- 1⁄4 - 1⁄2 teaspoon crushed red pepper flakes
directions
- In skillet, cook sausage till brown. Remove. reserving 2-3 tablespoons drippings in skillet.
- Cook mushrooms, onion, carrot and garlic in drippings till tender. Drain off fat.
- Combine bread cubes, sausage, cooked vegetables, cooked spinach, milk, basil, oregano, poultry seasoning and red pepper.
- Mix well. (If too dry, add a few drops of milk.) Form into balls using 1/2 cup mixture for each.
- Place on greased baking sheet. Bake in a 325*F oven 25 minutes.
- Serve arranged on spinach lined serving platter with turkey. Garnish with carrot curls.
