DIRECTIONS

  • Melt the butter in the saucepan and add flour, making a roux. Cook for 1-2 minutes then add the water. Bring to a boil and cook for 5 more minutes.
  • Beat the egg yolks and the milk. Combine with the first mixture, beating constantly with a whisk. Season to taste.
  • Strain the sauce through a very fine sieve or several layers of cheesecloth. Add lemon juice just before serving.
