- 1 (7 ounce) can salmon (cosco brand)
- 1⁄2 cup fat-free cottage cheese, small curd
- 2 tablespoons Miracle Whip (or mayo)
- 1 teaspoon dried parsley
- 1⁄2 teaspoon pepper
- 4 flour tortillas
- 4 romaine lettuce leaves
- 4 slices tomatoes (optional)
directions
- Drain salmon, add cottage cheese, Miracle Whip (or mayo), pepper and parsley. Cover and let sit in fridge for at least 30 minutes or overnight.
- To assemble, take flour tortillas and warm in in microwave for at least 10 seconds.
- Place one piece of romaine lettuce on tortilla, spread on salmon mixture, top with tomato, roll up and cut in half.
- Serve with carrot sticks and low-fat ranch dressing.
