  • 1 (16 ounce) can salmon
  • 1 tablespoon lemon juice
  • 12 medium onion (chopped)
  • 14 teaspoon salt
  • 14 teaspoon black pepper
  • 14 teaspoon dry mustard
  • 1 tablespoon parsley (chopped)
  • 1 extra large egg
  • 2 cups cracker crumbs (coarse crushed)
  • Coating

  • 1 extra large egg
  • 2 tablespoons milk
  • 1 cup cracker crumb

  • Flake the salmon into a mixing bowl - remove bones and skin. Be sure to use the liquid from the canned salmon.
  • Add seasonings, onion, parsley and lemon juice to the salmon. Mix well.
  • Stir in egg and cracker crumbs to the salmon mixture. Mix until thoroughly moistened.
  • Shape mixture into patties.
  • Dip each patty in a mixture of one beaten egg and 2 tbls of milk. Roll or pat the washed patty in a dish of cracker crumbs.
  • Fry in a skillet on both sides until just golden brown.

  1. Very good salmon patties, the only thing I did differently was to add yellow pepper to the mixture and I used Panko crumbs for rolling them in. I fried them in a combination of butter and oil.

That's certainly part of the fun of touring - get off the highway and explore the local towns and cuisines.
