- 8 tablespoons butter, melted
- 1⁄4 cup brown sugar
- 1⁄2 cup milk
- 1⁄2 cup maple syrup
- 1 teaspoon maple extract
- 1 egg
- 2 cups flour
- 1 1⁄2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1⁄2 cup pecans, chopped (optional)
- 1 dash crystal sugar
directions
- Preheat oven to 400.
- Place 12 cupcake liners in a standard size muffin pan.
- Melt 1 stick butter in a microwave safe bowl.
- Stir in brown sugar
- Add egg, milk, maple syrup & maple extract, mix well.
- Sift together dry ingredients, flour, baking powder & salt.
- Add nuts (optional).
- Divide batter evenly between 12 cupcake liners.
- Top with crystal sugar or sugar in the raw granular sugar for a crunchy topping.
- Bake 15 minutes.
