- 1 (16 ounce) can corn
- 1 (16 ounce) can black beans, drained
- 3 (16 ounce) cans black-eyed peas, drained and rinsed of all juice
- 1 (6 ounce) jar chopped pimiento, juice included
- 1 bunch scallion, thinly sliced, green part only
- 1 tablespoon fresh oregano
- 1 tablespoon Tabasco sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon black pepper
- 1 tablespoon cilantro (fresh)
- 1⁄2 bunch parsley, chopped
- 1 (6 ounce) can diced chilies (or 3 diced jalapenos)
- 1 (16 ounce) can diced tomatoes
- 1 1⁄2 cups Italian dressing
- 1 green bell pepper, finely chopped
- 4 fresh garlic cloves, diced
directions
- Mix all ingredients together.
- Let sit for 4-8 hours before serving (so flavors mix).
- Serve with tortilla chips.
