- 6 large sweet potatoes, peeled and cut into 1-inch chunks
- 1 cup unsalted butter, melted
- 2⁄3 cup firmly packed light brown sugar
- 2 tablespoons fresh lemon juice
- 2 teaspoons Chinese five spice powder
- 1⁄2 teaspoon ground ginger
directions
- Coat a 13 x 9 inch baking dish with nonstick cooking spray.
- Add potatoes to the prepared dish.
- In a bowl, stir together the remaining ingredients until well blended; pour the butter mixture over the potatoes and turn to coat evenly.
- *At this point, you can cover and refrigerate for up to 2 days, bring to room temperature before continuing.
- Preheat oven to 375°; bake until tender when pierced with a knife, 45-55 minutes.
- Remove from the oven and serve hot or at room temperature.

I thought the potatoes were good and they fit in just fine with my friend's Asian-inspired potluck... but I'm not sure my friends liked them as much! I'm a sweet potato freak and would eat them just about any way you could serve them, though. Four stars.. yummy enough.. but not for everyone's taste buds.
