Roasted Garlic Ice Cream

"Make sure there are no thyme leaves on the garlic, after it comes out from the oven."

• Serves: 6

ingredients

• 1 head roasted garlic (see recipe)
• 3⁄4 cup sugar
• 1⁄8 teaspoon salt
• 6 egg yolks
• 2 cups milk
• 1 cup cream
• 1 teaspoon vanilla

directions

1. Squeeze the garlic cloves into a blender, add remaining ingredients. Cook in a saucepan lightly.
2. Strain into a vessel and chill.
3. Freeze in an ice cream machine.
