Roasted Garlic Ice Cream

- 1 head roasted garlic (see recipe)
- 3⁄4 cup sugar
- 1⁄8 teaspoon salt
- 6 egg yolks
- 2 cups milk
- 1 cup cream
- 1 teaspoon vanilla
- Squeeze the garlic cloves into a blender, add remaining ingredients. Cook in a saucepan lightly.
- Strain into a vessel and chill.
- Freeze in an ice cream machine.
