directions

  • heat oil in frying pan over high heat. add shrimp and season well, cook for 2 minutes.
  • turn shrimp over and conitune cooking for 2 to 3 minutes. remove shrimp from pan and set aside.
  • add vegetables and garlic to hot pan. cook 1 minute over high heat. return shrimp to pan and season if nessasary. add tarragon and cook 2 minutes.
  • serve shrimp and vegetables garnished with wedges of avocado.
  • sprinkle with lemon juice and parsley and serve.
