- 1 medium eggplant, peeled and finely chopped
- 1 zucchini, chopped
- 1⁄4 cup sun-dried tomato packed in oil, drained and chopped
- 1 yellow bell pepper, finely chopped
- 1 medium red onion, finely chopped
- 1 garlic clove, crushed
- 1⁄4 cup fresh cilantro, chopped
- 3 tablespoons fresh basil, chopped
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
directions
- Combine all ingredients in slow cooker. Cover and cook on LOW for 6-7 hours, or until veggies are tender. Serve over pita or sourdough rolls, cut into wedges.
