Raspberry Fool

- 2 1⁄2 cups fresh raspberries, divided
- 1 tablespoon unflavored gelatin
- 1⁄4 cup orange juice
- 1 teaspoon orange rind
- 4 tablespoons sugar
- 1 cup plain yogurt
- 1 egg white
- fresh mint leaves (to garnish)
directions
- In a food processor or blender, puruée 1 1/2 cups of the raspberries. In top of double boiler, combine gelatin with orange juice and heat, stirring, until dissolved; pour over raspberries. Stir in orange rind, 2 tablespoons sugar and yogurt.
- Beat egg white until stiff, gradually add 2 tablespoons sugar and beat until shiny. Fold beaten egg white into raspberry mixture. Pour into 3-cup ring mold that has been rinsed with cold water. Chill for about 2 hours, or until firm.
- Turn out onto a serving plate and fill center of ring with remaining raspberries, sprinkling a few around the outside. Garnish with a few fresh mint leaves, if desired,.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
