  • 14 cup red wine vinegar
  • 2 tablespoons sugar
  • 2 tablespoons peanut oil (or vegetable oil, eyeball it)
  • 16 ounces coleslaw mix
  • 1 teaspoon salt
  • salt, to taste
  • pepper, to taste

directions

  • Mix vinegar and sugar.
  • Add oil.
  • Add cabbage to dressing and season with salt and pepper.
  • Toss with fingers to combine.
  • Adjust seasoning.
  • Let stand 20 minutes.
  • Re-toss and serve.

  1. Husband and I love this slaw recipe because it is so flavorful, not vinegary, yet light. We think it goes better with fried foods and BBQs then the mayo slaw.

I only came to cooking in my 50s, when we moved home to a tiny town with only a few restaurants. I'm always on the hunt for easy, flavorful recipes (often ethnic cuisines), and I'm always ready to try something new and different! In cold weather I gravitate to stews, soups, and casseroles of the not-too-heavy kind; in hot weather I love a salad or cold soup. Partly because of my husband's diabetes (I'm borderline) and partly out of indolence, baking is not my thing.
