  • 1. Cook quinoa with vegetable broth in a small saucepan by bringing to a boil then simmering until all the liquid is absorbed-about 15 minutes. It will have cute little tails.
  • 2. If you're a multi-tasker, while quinoa is cooking, heat butter, add onions and tarragon and saute a few minutes until onions are translucent.
  • 3. Add in cashews and peas and turn off heat.
  • 4. Mix butter mixture with quinoa and serve.
