- 2 large cooked beetroots, chopped
- 150 g fresh rocket
- handful pomegranate seeds
- 2 tablespoons fresh parsley, chopped
- 100 g cooked quinoa
- 1⁄2 lemon, juiced
- 1 carrot, grated
- handful walnuts, toasted
- 1 tablespoon olive oil
- 1 teaspoon white wine vinegar
- salt and black pepper (to season)
directions
- Create a dressing by mixing the lemon juice, vinegar and olive oil.
- Combine the quinoa, parsley, beetroot, pomegranate seeds and carrot.
- Layer your bowl with the rocket leaves, add the quinoa on top, drizzle with the dressing and finish with a sprinkle of walnuts.
