Quince, Manchego and Arugula Salad
"Lovely simple salad with Spanish tones. Great for tapas or as a starter for your next dinner party! Serve with a lovely rose. (Remember Lancer's? Perfect for this!) Taken from tapenawines .com and posted for ZWT. (This recipe calls for 1 oz. of cheese per salad; that seems like alot to me. Please use your own discretion when adding the cheese, so as not to smother the salad! As I said seems like a lot, to me...)"

ingredients
- 6 ounces manchego cheese, shaved thin
- 1 tablespoon olive oil
- 1 teaspoon coarse sea salt
- 4 ounces quince paste, cut into thin slices at room temperature
- 3 cups baby arugula, washed
- fresh pepper, to taste
directions
- In a large bowl, toss the arugula with olive oil and season with sea salt.
- Divide the arugula onto 6 small plates.
- Place a slice of quince paste on top of each plate.
- Sprinkle each plate with cheese.
- Season with pepper.

My parents owned a grocery store when I was growing up, so there's my love of FOOD! My friends all love to drink, so there's my profession! I stopped bartending 5 years ago, when my son was born, but still 'do' private parties. DH and I did a 'Supper Club' for a while, but life kept getting in the way!
I am a SAHM, to a rambunctious 5 y.o....I LOVE cooking and collect cookbooks and anything kitchen related! I'm kinda picky, but will just drop an ingredient or make a sub, so I can still try a recipe.
I'm looking forward to many years of enjoyment here, and hope to participate in some events soon!
