Quick Peppered Steak

ingredients
- 4 thin minute steaks
- 1⁄2 teaspoon pepper, coarsely ground
- 1 tablespoon butter
- 1 garlic clove, crushed
- 1⁄4 cup sherry wine
- 1⁄2 teaspoon brown sugar
- 1 dash hot pepper sauce
directions
- Press pepper into fast-fry steaks.
- Saute in butter over medium-high heat for 1 minute per side.
- Reduce heat to medium and add remaining ingredients.
- Saute for 2 minutes per side and remove steaks from pan.
- Boil sauce until it's been reduced by half and pour over steaks.

I liked this recipe, but I prefer other styles of cooking this. As I said, I liked this, but my son really didn't care for it. It cooks up quick, which is a bonus :)! But the "sauce" once you pour it into the skillet, evaporates before you have a chance to reduce it. I would take the skillet off the heat for a while before adding the sauce to try and save a little "juice" for the meat. I enjoyed a different taste for minute steak other than country fried steak. I had black beans (very well cooked) with these, and they actually accentuated the taste of these minute steaks. Surprisingly, I have leftovers (very rare, with a 17 year old son), and I think they will be good as a sandwich. Made for PRMR Tag.
