Quick Fix Potato Soup

"I prefer to make potato soup the long and fattening way, but this is a pretty good quick rendition that is also healthy."

  • Combine milk and water in a large saucepan over high heat and bring to a boil. Remove from heat and add instant potatoes. Stir vigorously with a whisk until well blended.
  • Add 1/2 cup cheese until melted. Season well with garlic salt and pepper.
  • Ladle the soup into a bowls and top with the remaining cheese, chives, sour cream, scallions, and bacon.
  • Enjoy!
