Quick Fix Potato Soup

- 4 cups skim milk
- 3 cups water
- 1 (7 ounce) package instant mashed potatoes
- 4 scallions, chopped
- 4 slices bacon, crumbled
- 1 cup 2% cheddar cheese, shredded
- 1⁄4 cup fat free sour cream
- 2 tablespoons chives, chopped
- 1 teaspoon garlic salt
- 1⁄2 teaspoon black pepper
directions
- Combine milk and water in a large saucepan over high heat and bring to a boil. Remove from heat and add instant potatoes. Stir vigorously with a whisk until well blended.
- Add 1/2 cup cheese until melted. Season well with garlic salt and pepper.
- Ladle the soup into a bowls and top with the remaining cheese, chives, sour cream, scallions, and bacon.
- Enjoy!
