Quick & Easy Egg Roll in a Bowl

- 1 teaspoon sesame oil
- 1 medium onion, diced
- 1 lb ground pork
- 2 tablespoons soy sauce, divided
- 8 ounces coleslaw mix
- 5 ounces shredded carrots
- 1 (3 1/2 ounce) bag wontons, strips
- 2 green onions, sliced thin
- 1 tablespoon peanuts, chopped (optional)
directions
- Put the sesame oil, pork and onion in a large skillet (or Instant Pot on saute). Cook until the pork is no longer pink and the onions are clear. Add one T of the soy sauce to deglaze the pan, being sure to scrape up all the bits at the bottom. Add the coleslaw mix and the carrots and cook until tender-crisp. Stir in the other T of soy sauce until just mixed. Spoon into bowls and top with the sliced green onions, peanuts and wonton strips.
- Note: you can add celery, sweet peppers, sesame seeds, etc to your liking!

I'm an Arkansas native but spent my teen-aged years in Memphis. I have four grown sons and 12 grandchildren. I currently live in Chattanooga, TN and cook mainly for just two, which has been quite an adjustment!
