Quick & Easy Egg Roll in a Bowl

"This recipe is so quick and is just deliciously filling. The crispy wontons strips are key. You can usually find them in the store with the salad toppings (even Walmart carries them)."

  • Put the sesame oil, pork and onion in a large skillet (or Instant Pot on saute). Cook until the pork is no longer pink and the onions are clear. Add one T of the soy sauce to deglaze the pan, being sure to scrape up all the bits at the bottom. Add the coleslaw mix and the carrots and cook until tender-crisp. Stir in the other T of soy sauce until just mixed. Spoon into bowls and top with the sliced green onions, peanuts and wonton strips.
  • Note: you can add celery, sweet peppers, sesame seeds, etc to your liking!

I'm an Arkansas native but spent my teen-aged years in Memphis. I have four grown sons and 12 grandchildren. I currently live in Chattanooga, TN and cook mainly for just two, which has been quite an adjustment!
